The history of Panificio Perrone began in the Sassi of Matera, when Nicola Perrone started baking the dough from neighborhood families in his wood-fired oven. Since then, five generations have preserved the same connection between bread, family, and the city.
At Panificio Perrone, craftsmanship is not a slogan, but a daily work method. It consists of carefully repeated gestures, respected timings, selected flours, sourdough, and expert hands that guide every stage of bread making.
Panificio Perrone is located at 96 Dante Alighieri Street, Matera. It is here that the Bread of Matera and traditional products are made every day.
The history of Matera Bread is intertwined with that of the Sassi, wood-fired ovens, and the families who once kneaded dough at home. A story made of bread, community, peasant labor, and artisan tradition.
Matera’s cuisine comes from simple ingredients and an ancient peasant culture. Bread, legumes, vegetables, “peperoni cruschi” (crispy peppers) and baked goods tell the story of a land capable of transforming simplicity into authentic and recognizable flavors.
